3 recipes for summer sunsets
Warm evenings, cold drinks, rooftop get togethers, unforgettable sunsets, happy times… We can’t wait for summer! Here are our favorite recipes for summery sunset gatherings – sweet, salty and easy to make. Enjoy!
1. Blueberry, Feta and Honey-Caramelized Onion Pizza
Ingredients (2 pizzas):
- 2 flatbreads
- 1 teaspoon olive oil
- 1 cup thinly sliced red onion
- salt
- pinch red pepper flakes
- 2 tablespoons honey
- ½ cup ricotta cheese
- ½ cup feta cheese
- 1 cup blueberries
- micro arugula
Instructions:
Preheat your oven to 200C. Heat the olive oil in a medium pan over medium low heat and add onions. Then add salt to taste and red pepper flakes. Cook the onions for 3-5 minutes until it is wilted, and stir in the honey, letting them caramelize. Remove from heat.
Mix ricotta with the feta cheese, while the onions are being cooked. Spread this mixture over the flatbreads, and top it with the caramelized onions and blueberries.
The pizzas are ready when the flatbread has toasted and the ricotta mixture has softened. This will take about 10 minutes. Remove from oven, top it with arugula and enjoy immediately.♥
2. Grilled Blue Cheese, Honey & Walnut Toasts
Ingredients (2 normal size toasts or 4 mini-toasts):
For the walnut pesto:- ½ cup fried walnuts
- ¼ cup olive oil
- 1 clove of garlic
- juice of 1 lemon
- red pepper(grounded)
- sea salt & black pepper
- 4 slices of toast bread
- 60g of the soft blue cheese
- 60g of the danablu cheese
- honey
Instructions:
In order to make the walnut pesto, properly mix all the ingredients and season to taste. Be careful: do not oversalt it, because the blue cheese is quite salty by itself!
To make the cheese toasts, slightly fry the bread in oven. Spread the pesto on one half of them, and cheeses mixtures on the other half. Top the cheeses’ half of toasts with honey, and then cover it with the pesto toasts. Leave them in oven for some more time, until the cheese melts.
Serve with pickled cucumbers and red wine!
3. Lemon Blueberry Vodka Spritzer
Ingredients (1 serving):
- 50 ml blueberry flavored vodka
- lemon flavored sparkling water
- 1 tablespoon honey syrup (to taste)
- lemon slices
- fresh blueberries
- rosemary sprig
Instructions:
In order to make a drink, combine vodka with the honey syrup (cool). Honey syrup can be done by cooking ½ cup of water together with ½ cup honey in a small pot over medium low heat.
After shaking the vodka, syrup, and ice together until chilled, strain it into a glass filled with ice. Add some flavored sparkling water. If desired, add some lemon slices, blueberries and rosemary to taste. Enjoy your drink!
