Curried veggie and chickpea wrap with garlic yogourt sauce

    1 onion, 1 cup eggplant, 1½ cup sliced mushrooms, 1 cup canned chickpeas, 1 tbsp curry powder, salt, 4 whole wheat tortillas bread, 4 tbsp non dairy yogourt, 1 small garlic clove, 2-3 twigs fresh thyme

    This chickpea wrap ticks all the boxes; it is delicious, it is quick and easy to prepare, it is healthy, and it has curry in its name! 

    Lately I’ve been preparing food that takes a bit of time to prepare, although delicious, this time I wanted quick and easy. This veggie and chickpea wrap is exactly that, it takes about 15 minutes to prepare, and it’s sooo delicious!
