Tofu poppers with arugula dipping sauce

    100g of firm tofu, 1 small onion, 1 cup diced eggplant, 1 cup arugula, 1/3 cup vegan parmesan, 1 tsp chili powder, 1 tsp onion powder, ½ tsp ground cumin, 10 mini sweet peppers, salt, 1/3 cup vegan mayo, ½ cup arugula, ½ tsp onion powder

    I don’t know if you’re like me, I love poppers, but hate fried food; it is unhealthy and often greasy.

    These poppers are not only BAKED but they are healthy!!

    When I went to the grocery store and saw these peppers, I knew I had to do something with them, they were so colourful I wanted to eat them on the spot. They are sweet and not at all spicy, the minced tofu as a “meaty” consistency and marries so well with the buttery richness of the eggplant.

    They are the perfect appetizer!
