    1 eggplant, ½ cup brown lentils, 2/3 cup water, 1 can (500ml) stewed tomatoes, ½ tsp turmeric, 1 big garlic clove, 1 cup no dairy yogurt, ½ tsp mint leaves, salt

    Burani banjan is a dish from Afghanistan, it is made out of delicious eggplant and tomato served with garlicy yogurt sauce.

    Burani banjan is a rustic and very popular dish from Afghanistan, like many Afghani food, it is not spicy but full of flavor.

    I love Afghani food, their cuisine has been influenced by the surrounding countries over the years as they are on the trade route called ”Silk road”; an ancient network of trade routes that were for centuries central to cultural interaction originally through regions of Eurasia connecting the East and West and stretching from the Korean peninsula and Japan to the Mediterranean Seathey from Iran to china. Afghan cuisine shares great similarities with Indian cuisine especially in the variety of spices.

    They usually fry the eggplant, but I don’t like fried food; it is not healthy, so I grilled mine instead. I also added lentils to make it heartier, so it can be eaten as a side but also as a meal.
