BREAD & MILK
When I was growing up, minimalism was not a Scandinavian inspired lifestyle concept, it was a simple way of being. My father used to snack on radishes that he pulled himself off the ground, winter apples and yoghurt.
Breakfast was not big and quite often skipped. To be honest, I’m not a huge fan of a massive breakfast myself, to this day.
I love jam and when we have it I will not display any form of self-control but most days a generous cup of black coffee and a piece of fruit will do the trick.
I wish this recipe and I went way back, but we don’t.
In real life, that’s not the case, but there’s nothing stopping me from having it now.
Starting with brioche, because if you’re gonna do it, do it right or not at all. You can make a lovely loaf of vegan brioche from scratch if you feel like it. Here’s a fantastic recipe that I discovered recently.
But if you are lucky enough to live near a bakery that makes plant-based treats, give it a go.
Even a week old loaf would work with this recipe. Anything can be salvaged with a pat of butter and a sprinkle of cinnamon under a hot grill.
Plant-based milk is a good staple to have about and with your bread, in a bowl, you can add to it as you wish, with dried fruit, seeds and grains, or even chocolate to jazz it up.
You can make it from scratch too, which I highly recommend.
Here’s my collection of vegan, homemade milk recipes.
Have your milk and bread in bed, on a cold, rainy morning, with the fairy lights on and don’t dwell on the happy childhood you never had. Make the most of what you have now, today, this very morning.
‘Cause this one is up to you.
RECIPE
Serves 2
Preparation Time: 5 minutes
Cooking Time: 5 minutes
Ingredients
2 slices brioche bread
1 tablespoon butter, (plant based)
1 teaspoon granulated sugar
A pinch of ground cinnamon
2 cups plant milk (I used coconut)
How To
Heat the butter in a skillet. Toast the brioche bread slices for 2 minutes on each side, until golden brown.
Sprinkle on the sugar and cinnamon, patting with your fingers to coat evenly.
Dice into cubes.
Divide into two bowls and serve with cold milk.
Enjoy in bed, under the covers, preferably with the fairy lights one.
