600 g Hake Fillets
2 tsp Chipotle Paste
1/2 Small Red Cabbage shredded
1 Little Gem Lettuce shredded
8 Radishes finely sliced
1 Small Tin Sweetcorn
4 Vine Tomatoes deseeded and finely chopped
1 Juice of Lime
1 Small Onion finely chopped
1 Bunch Coriander roughly chopped
8 Mini Wraps
20 minutes preparation - 20 minutes cooking Minutes
This is one of my favourite ways to get the kids to eat healthier food - kid just seem to love Mexican food, I think it's the fact they can just load them up themselves that really appeals to them.
And I love to cook Mexican food because it's so quick and simple! Win, win when you're a busy mama!
I made these gorgeous fish tacos with hake but it's nice with salmon or cod - nice chunky fish work best.
- Heat the oven to 190C
- Rub the fish fillets with chipotle paste - loosely wrap in a tin foil parcel, sealing all the edges - then place on a baking tray and bake in the oven for around 18-20 minutes (or until cooked through)
- Whilst the fish cooks - make up the salsa. Just mix the tomatoes, corn and onion with half the lime juice, the coriander and season with salt.
- Once the fish is cooked - flake into bitesized pieces
- Load up the tacos with shredded lettuce, cabbage and radish - add the fish and top with fresh salsa.
I like to add in some sides when cooking Mexican food so usually make up some homemade guacamole
If I'm making this for a Saturday night dinner I usually add in a side of
herby diced potatoes topped with soured cream because the kids go mad for these (and I have to admit they are super tasty... and very moreish)
