Mauritian tofu daube

    1 onion, 1 tbsp fresh ginger, 3 garlic cloves, ½ tsp fresh thyme, 1 tsp sambal oelek, ½ tsp cinnamon, 1 can (796ml) diced tomatoes, 2 potatoes, 225g firm tofu, ½ cup frozen peas, handful of fresh coriander, salt

    This tofu daube is a hearty, comforting, hommy dish from the Island of Mauritius that you’ll want to eat over and over.

    This dish is traditionally made with beef, but I made it with tofu instead. It as an intense tomato flavor, blended with the hearty potato and the fragrance of cinnamon and fresh coriander.
