Butternut squash, lentils and avocado sandwich

    1 small crusty loaf, 1 cup butternut squash, ¼ cup red lentils, ½ cup water, 2 tbsp tomato sauce, ½ avocado, ½ tbsp olive oil, romaine lettuce, 1 twig of fresh thyme, salt

    This sandwich is so delicious, filing and different, you’ll want to eat it over and over again. The caramelized squash is beautifully sweet, while the lentils are earthy with a hint of tomato, and the avocado brings a freshness, and that crusty bread that makes it a sandwich, well…..I just loooove crusty bread.
