Chocolate Chip Banana Bread
Heat the oven to 350F - Grease a inch loaf pan
In a large bowl mix together the coconut sugar, almond meal, flour, salt, cinnamon and baking soda.
In another bowl mash the bananas and add the eggs, coconut oil and vanilla extract.
Add the wet ingredients to the dry and combine.
Toss the chocolate chips and walnuts in a little flour then add to the batter, stir well to combine and pour into the prepared loaf pan.
Place in the oven for approximately 45-50 minutes or until just cooked through. Test with a toothpick.
While the cake is baking, mix all the frosting ingredients together. It's important to have the butter and cream cheese at room temperature or it will be hard to mix. Beat all the ingredients until you have a smooth thick frosting. If the mixture is too thick add a little orange juice. If it's too runny, add a little confectioner's sugar. Set aside.
Remove from the oven, allow to cook in the pan for 5-10 minutes, then turn out onto a baking rack and allow to cool thoroughly. Frost if desired and serve.
