Healthy Spiced Carrot Bread Loaf

    Ingredients: • 2 Carrots medium finely grated and squeeze excess moisture • All Purpose flour 155gr • Rolled Oats 50gr • Baking Power 1 tsp • Baking Soda 1/2 tsp • Cinnamon powder (Ceylon) 1tsp • Ginger powder 1/2 tsp • Nutmeg a pinch • 2 Eggs large room temperature • Olive oil 160 ml • Honey 160 ml • Vanilla extract 1 tsp • Dried Cranberries (sugarfree) 40gr • Walnuts roughly chopped 30gr • Salt a pinch Method: 1) Preheat oven at 175 °C. Line a baking loaf tin with parchment paper. 2) In a large bowl, add the flour, salt, spices, baking powder, baking soda and rolled oats. Mix them well with a whisk. 3) In another bowl add the eggs, olive oil, honey, vanilla. Whisk well until you get a homogenized mixture. 3) Add the wet mixture to the flour mixture and whisk just until incorporated. 4) Whisk in gently the grated carrot, just until it gets incorporated. Then, fold in the chopped walnuts and cranberries. 5) Pour the batter into the prepared loaf tin and bake in the preheated oven for 45 minutes. Notes: I used a 10.5x20x6cm loaf tin. You can use any loaf tin close to these measuments.

    As mentioned in the title, this carrot bread loaf is indeed pleasingly spiced thanks to the cinnamon, ginger powder and nutmeg. The taste of the loaf is great, providing you also with unique aromas thanks to these spices.

    No sugar is added here, honey does the trick when it comes to sweetness, and olive oil is used for moisture, instead of butter or any other oil.

    And let's not forget, the rolled oats, the wallnuts and sugarfree cranberries that add a nice tang, and hey... What you know? We got ourselves a healthy Spiced Carrot Bread Loaf.
