Loaded caramelized butternut squash

    2 medium butternut squash, 1 can (540ml) chickpea, 2 cups cremini mushroom, ½ onion, ¼ cup cherry tomatoes, 1 avocado, 1 tbsp olive oil, 1 tsp cajun spices, ½ tsp cumin seeds, ¼ tsp fresh thyme, ¼ cup coconut milk, 2 tbsp vegan parmesan, salt, 2 twigs of fresh thyme

    One of my favorite easy meal are loaded sweet potato, but I figured, why not make it with butternut squash instead. This loaded caramelized butternut squash is such a great twist.

    This caramelized butternut squash is creamy, a little sweet, buttery, the chickpeas bring a nice crunchiness, the avocado and cherry tomatoes; a freshness, the whole is topped with a nice creamy, coconutty and cheesy sauce. Deeeelicious!!
