    1 onion, 1 garlic clove, 1 can (540ml) chickpea, 1 cup mushroom, ½ cup eggplant, 1 can (398ml) coconut milk, ½ cup small prunes, 1 tsp garam masala, 1 tsp turmeric, 1 tsp curry powder, 1 tsp cumin seeds, 1 tsp coriander powder, ½ tsp cinnamon, 1 tsp grated fresh ginger, ½ cup vegetable broth, small handful of fresh spinach, salt

    This chickpea and prunes curry is the perfect meal for the chilly weather.

     I’m happy for all those warm and comforting meal I will be preparing. Currys are my go to when its cold and I need comfort.

    This one is a mix of exotic flavors from the spices and sweet notes from the prunes, in a smooth and silky coconut sauce.
