Nectarine and Mozzarella salad

    Ingredients: To grill the nectarine: • 1 Nectarine sliced into 10 wedges • Salt 2 pinches • Italian seasoning 2 pinches • Olive oil 2 tbsp Rest of the ingredients: • 1 Cucumber seeds removed sliced on the bias • 6-8 Cherry Tomatos halved • 1 Mozzarella ball torn into smaller pieces (I used a package of 125 gr) • Pistachios 2 tbsp • Extra basil leaves for garnish and flavour • Salad greens 3-4 good handfuls For the dressing: • 8-10 Fresh basil leaves • Pistachios 15 gr • White balsamic vinegar 1 tbsp + 1 tsp • Olive oil 100 ml • Salt 1 tsp Place all the ingredients together in a food processor, and blend well, until incorporated and emulsified. Place the dressing in small jar and refrigerate while you're prepping the rest of the salad. Method: 1) In bowl mix all the ingredients required for grilling the nectarine wedges. 2) Place your griddle pan over medium heat. Once it gets hot enough, grill the wedges for about a minute each side (including the skin). Remove and set aside to cool down completely. 3) To finish making the salad, assemble all the ingredients in a salad platter starting with the salad greens. Layer the rest of the veggies and nectarine wedges, and top with the basil leaves. Give the dressing a few mixes, drizzle all over the salad and serve.

    This is a different version of my nectarine and feta cheese salad. Simply substituting the feta cheese for mozzarella, grilling the nectarine this time and I'm making the most delicious dressing which consists of white balsamic vinegar, pistachios and fresh basil leaves. It's a great choice as part of your lunch or dinner table, it just tastes super flavourful and fresh! It does taste like the summer!!!  Make and enjoy this salad while nectarines are still in season.
