Quarantine Recipes - Delicious Banana Bread
Hello everyone,
As we are all spending our days at home, I see that all of my friends and the people I follow on social media (Youtubers, Bloggers, Actors, Actresses and etc.) are looking for things to keep themselves busy.
It’s certain that we are going through a very different process from our normal day-to-do, but I believe the most important thing is protecting our physical and mental health. If you are asking yourself; "I was here to find out the banana bread recipe, what is she talking about?!" I can totally understand, so let me get to it. I’m here to give you a recipe, which you will enjoy to prepare and keep yourself busy at home.
I want to highlight that this one will be a kind-a-healthy recipe. No refined sugar, no sour cream and no all-purpose flour! We are at home and not socializing these days but we still care about ourselves, right?

Ingredients:
- 2 eggs
- ½ cup virgin olive oil. (Around 100 grams)
- 3 tablespoons of plain whole-milk Greek yoghurt
- 3 large ripe bananas (Around 350 grams)
- 3 tablespoons of honey or agave syrup
- 1 ¾ gluten-free or whole wheat flour
- 1 teaspoon of ground cinnamon
- 1 teaspoon of salt
- 1 teaspoon of baking soda
- ½ cup chopped bitter chocolate or walnuts (optional)

How to Make:
-Preheat the oven to 180 degrees Celsius. (356 Fahrenheit)
-In a large bowl, mash the ripe bananas with a fork until completely smooth.
-First add the eggs and then the virgin olive oil, honey and yoghurt. Stir all of them.
-In another cup, combine the flour, salt and baking soda.
-Add the second mixture to the mashed bananas and stir. You can add walnuts or the bitter chocolate too. (I don’t add them.)
-Stir everything until it’s uniformed. Do not overmix.
-Pour the mixture into a greased loaf pan. Sprinkle the cinnamon.
-Bake for 55 minutes or until a toothpick comes out clean.
-Let the bread cool in the loaf pan for 10 minutes.
-Transfer it onto a plate and let it cool for 20 more minutes before slicing.
Vegan Options for the Ingredients:
-Replace honey with agave or maple syrup.
-Use flax eggs instead of chicken eggs.
-Use almond mild or water instead of cow milk.
How to Make Flax Eggs at Home:
-Put 1 tablespoon of flaxseed meal and 3 tablespoons of water in a cup and stir. Let it rest for 5 minutes to thicken.
-This recipe equals to 1 egg.
