Saphed sem aloo baigan ki sabzi (Indian white bean, eggplant and potato stew)

    1/2 tsp mustard seeds, 1/2 tsp cumin seeds, 3 tbsp olive oil, 1 medium eggplant, diced 2 medium potatoes, 1/2 cup frozen green peas, 1 tomato, 1 can (540ml) white beans, 4 cups baby spinach, 1 tbsp fresh ginger, 1 1/2 tsp chili powder, 1/2 tsp turmeric, 1 tsp coriander powder, salt

    This beans, eggplant and potato stew is a great exemple of Indians delicious traditionnal cuisine, it is healthy, easy to prepare, yet simply divine. 

    This beautiful eggplant and potato stew comes from Uttar Pradesh; wich literally means ”northern province”, it is a state of the Indian Union located in the northern part of the country. It is the most populous state in the country, with about 200 million inhabitants.

    I absolutely adore Indian cuisine, and for a vegetarian/vegan their recipes are perfect; lots of veggies, all kinds of beans and above all, what I love the most, is the mix of fragrant spices. This one is no different, it is rich in spices, veggies and will transport you directly in India.
