Tofu and oyster mushroom soup

    8 cups vegetable broth, 1/4 cup soy sauce, 1 tbsp chopped ginger, 3 garlic cloves, 1 cup oyster mushroom, 2 cups nappa cabbage, 1 cup brocoli fleurets, 300g soft tofu, 1 tsp sambal oelek, 1/2 tsp ground coriander, 1 tsp rice vinegar

    Beautiful grilled oyster mushrooms, veggies and silken tofu topped with a delicious cabbage and soy sauce broth. This mushroom soup as a asian inspired feel. It as a clean, clear broth with a hint of ginger and simple delicious and healthy ingredients. This is the perfect  curl up in a comforter in front of the television soup.
