White beans fajitas wrap

    4 tortillas, 1 onion, 2 cups sliced cremini mushrooms, ½ red bell pepper, 1 cup canned white beans, handful of arugula, 1/3 cup quartered cherry tomatoes, 1 cup vegan mozzarella, 1 tsp cajun spices, salt

    Summer to me equals simple food, like sandwiches, burgers, salads ……, so this time I decided to prepare white beans fajitas wraps. They are so easy and fast to prepare, you’ll have time to enjoy your day without fussing around an oven.

    These fajitas wrap are healthy, vegan and gluten free if you use corn tortillas. The white beans brings a richness, the mushrooms, a meatiness, then you have the tomatoes and bell peppers that adds a sweetness and it is topped with the pepperiness of the arugula. Deeeelicious!
